yummy yummy in my tummy


Lately I've been wanting to do more for my animal friends, being vegetarian just isn't cutting it anymore. After lots of reading and tons of new recipes i decided it's time i start something new. exciting! :) SO becoming "vegan" has been on my top 5 things to do for a while now and it's quickly making it's way to my top threee. I've been vegetarian for almost fivee years now and to celebrate my anniversary i thought it would be a wonderful idea to share a yummy recipe as my first post :)

SWEET POTATO WEDGE WITH VEGENAISE AND SMOKED PAPRIKA DIP:)

it's super yummy

this will feed 7 of your sweet potato loving friends plus yourself

so here's what you'll need

4 sweet potatoes
2 tbsp of vegetable oil
1/2 tsp of each salt and pepper
OR
1/2 tsp of whatever spice you'd like :)

okay pay attention!

Scrub the sweet potatoes;
cut each lengthwise into 8 wedges.
In bowl, toss together potatoes, vegetable oil, salt and pepper or whatever spice you've chosen.
Roast on large rimmed baking sheet in 400°F (200°C) oven,
turning once, until tender, about 30 minutes.

TADA!

for the dip

toss together some vegenaise and smoke paprika too taste and there's you dipping sauce
serve hot :)
